Bison Neck

I found a half a bison vertebrae at the butcher labeled, "SOUP BONES." There was actually enough meat on it for dinner for 2.
I threw it in the crock pot this morning with 1/2 lb mushrooms and lots of herbs. I came home from an icy day to a wonderful smelling house and a begging pit bull. I got 3.5 quarts of bison stock and gave Lillian the filtered bits. It was delicious. I would put some Port in it next time.

It's interesting, I had never heard of cooking neck until you mentioned it on LJ and the on Top Chef, wonder of the fates are prepping me for something?
