Rainbow Cake in a Jar

My boss is making us dinner on Friday, I'm bringing dessert.

I am considering Rainbow Cake in a Jar.
However, I am only a moderately talented baker and would make the cakes from scratch and would like to have each color be a different flavor.
The flavors would have to work together and be something that people like.
The frosting is vanilla bean.
Nope, I don't know what she's making.

Idea One: Fruits
Lemon
Lime
Strawberry
Orange
Rhubarb

Idea Two: Spices
Chocolate
Cinnamon
Cardamon
Chile
Vanilla
Szh peppercorn

Idea Three: Florals
Orange blossom
Rose
Hibiscus
Honey
Mint


Honey Lemon Szh peppercorn would be bad ass. As would Hibiscus Orange Curry.

So many choices. Opinions?
