Pumpkin Poblano Enchiladas

Fall is stocking the freezer time of the year, which also means cleaning out the freezer.
Corn tortillas, enchilada sauce, roasted poblanos, 1c mashed roasted pumpkin, assorted beans, mozzarella, chevre.
I layer the tortillas rather than rolling them.

Really good, excellent smoky flavors, not too much spicy.

Mom called and asked which day this weekend we ought to wrap books for centerpieces, "Well, today it's rainy and cold, tomorrow it's warm. Tomorrow looks like perfect bulbing weather. And today looks like perfect sitting at the kitchen table with mom weather." We got 2/3rds of the books wrapped and I finished the rest while my enchiladas were baking.
I also spent 15 minutes on the phone trying to explain to my Uncle how to RSVP on the website. If the 80-year-old set can do it, I figured the 50 year olds might too, but no. I gave up and logged on myself.

Mom and I were discussing friends of ours and how childhood friend Gentlemen is now dating a Lady friend. Mom said, "But Gentlemen likes men."
"Yes. He goes both ways."
"What do you mean? Both ways?"
"Some people are happy dating either men or women."
This blew her mind. You'd think I was telling her that polar bears live on the moon. Mom went to art school, you'd think she'd heard of this concept before.

It's cold out now, and it'll maybe pretty close probably freeze tonight but only a hair, so we covered the tomatoes with tarps.
