Parsnips

I love parsnips. No, don't core them. And you don't even have to peel them.
There are many parsnip recipes out there:

But my favorite thing to do is:

Chop all the fall/winter veggies. Potatoes, Carrots, Parsnips, Broccoli, Cauliflower, Pumpkin, Peppers... whatever.
Mix with olive oil, salt and pepper.
Dump in a roasting pan.
Leave in a 400 degree oven for 45ish minutes. Stir it up every so often. Serve over rice if you are feeling fancy.

It's amazing.

Roast them, eat them raw, soup them, mash them, and they taste awesome no matter what.

Someone who doesn't even eat ham ate my hammy pizza.
There is nothing for dinner.

One of my favorite things to do with parsnips is to make pasta out of them. Cut long strips using a peeler, then sautee them in a little ghee or olive oil, with salt and pepper. Some fresh marjoram is very nice too. It makes for a surprisingly rich side dish.
