I was looking at a pile of cornbread-like pancakes left over from the other night, an over-flowing cheese drawer, and many veggies.

I roasted potatoes, carrots, parsnips, and asparagus. Soaked the pancakey chunks in the milk and eggs. Combined Veggies, EggyMilkBread, and cheese, poured in a big dish, then baked for 45 minutes. Filling and surprisingly good.
I'm surprised anytime bread pudding turns out well.

I'll have to remember this when my corn bread needs using up after chili night.
