Parsnip Potato Parsley Pancakes

1 big parsnip, grated
2 small potatoes, grated
1 parsley root, grated
2 eggs
flour
s&p
One has roasted red pepper hummus with capers and olives on top
another has ras el hanout and zatar sour cream
another has Big Ed's Gouda with a roma tomato.
Not pictured is a spinach, cashew, and strawberry salad with shitake dressing.

Most excellent for my first try at potato pancakes.
Parsnips are really sweet. I need to think more umami on top next time. Kimchi.
