and a side of fruit salad.

I'm borrowing a restaurant cookbook from [livejournal.com profile] gows called Coyote Cafe by Mark Miller. This is sort of from that.

And the version I made is sort of like this:

Except John made the corn cakes, then we put a layer of red pepper goat cheese on top, then the shrimp, and poured a bunch of leftover chipotle enchilada sauce over it. Really good, faster and easier than the food.com version.
