John roasted a capon last week, and the huge carcass just keeps providing dinner. I'd swore I ate the thighs and John at least one breast, but every time I open the container, there is more meat. When
gows was here we had:
Chicken and Asparagus Risotto
Chicken Pot Pie
Yesterday's lunch was Chicken and Mashed Potatoes (I think we forgot to eat dinner last night)
Now I am working on a Chicken, Zucchini, and Spinach Lasagna for tomorrow night.
I think it's finally done, and I'll be making stock tomorrow night. Not including soup made from the stock, one $12 capon is working out to provide protein for about 14 meals.
We are having Felonious over tomorrow, he is no longer vegetarian and I hope will enjoy Lasagna.
