mijagourlay requested a Chai Vodka infusion for Christmas, but I made enough for both since Mija specifically asked for vodkas when I visit in Feb.
Previous experiments revealed that less spice is more, and less time infusing is better.*
3 cups good vodka (I'm using a Swedish kind, but prefer Ketel One or Van Gogh, since it'll be mixed later, it won't matter so much)
6 black peppercorns
6 whole cloves
6 whole allspice
1 small chunk nutmeg
12 szechuan peppercorns (I LOVE them)
1 cinnimon stick
2 Tbs raw local honey
It already smells rather tasty.
ziptie sent the most fragrant box ever. Honeycrisp apples and quince. The apples ended up too bruised for eating, but made a great applesauce (you have to individually wrap them). 1 quince will go to the vodka experiments. I'll cook and nibble on one, the rest I will make into syrup and pour over panna cotta. THANKS NOAH!!!!
