It Came From the Pantry: Kamut with Kale and Apples

Mostly I just like saying kamut. KAM MOOOOOOO. Seriously, it holds up to braising beautifully.
The restaurant yesterday gave us small red delicious apples as a side. I put them in my handbag because they always come in handy (I once traded one for framing services, also, hypoglycemic).
Kamut
Kale
2 small apples
Pancetta
Apple cider
braise for 2.5h
The bunny was happy to eat the kale stems and apple cores.
This was REALLY good. The kamut was awesome and red deliciouses transformed into actual deliciousness. You could easily make it vegan. The kamut takes up lots of cider so check to make sure it doesn't dry out.
