I was dubious last summer when I read about Cream of Zucchini soup in The Silver Spoon. It sounds icky. But it's The Silver Spoon! They can't be wrong. They aren't, it's VERY delicious.

I have heard that some people actually throw out their arm-sized zucchini just because they are no longer tender. Silly and wasteful. I had lots of giant zucchini.

10 lbs zucchini
1 stick of butter
1 onion
garlic cloves
stock
milk
s&P

Melt butter in the soup pot. Add diced onion. Garlic. Diced zucchini. Cook until tender, stirring every so often. Stock. Cook down into mush. S&P.
Blend it with the immersion blender.
If you are going to freeze your 2 gallons of soup, stop here. If not, add milk.
I froze mine in quart and pint jars. I filled the pint jars halfway so I can add the milk later.

Dude, it's soup. If you want don't 2 gallons, just use like 2 lbs of zukes.

I love cream of zucchini soup. This is pretty much the recipe I use, except I add a little nutmeg, and sprinkle a little grated gruyere on top. It's also good to go southwest with it: add chiles, cumin, coriander, and serve with a dollop of sour cream.

Awesome ideas, I am so into adding that into parts of my 2 gallons of soup base.
