"We eat too well...."

We ran out of eggs this morning. I suggested that we visit the newly remodeled King Soopers about 10 blocks NorthWest of us (there is also a King Soopers 10 blocks due North, and one 1 block East). It had been under construction for over a year but I remembered that the cheese section they were putting in rivaled Whole Foods.
The new grocery store is HUGE. It has a sofa and beds section. Really.
Reminds me of Carrefour Hypermart.

The cheese and produce sections did not disappoint. We got gouda, local goat brie, 3 types of irish cheddar....
Parsley root, sunchokes, macintosh apples (which are becoming rare here, I don't see them that often), golden beets with greens.

Skyr, they carry skyr.

So dinner this evening:

Thinly slice:
1 fennel bulb with fronds
2 big sunchokes
3 parsley roots
roast in the oven (I also made granola* and roasted the beets since the oven was on)

1 box bow-tie pasta
2c fresh basil
about $8 worth of Humboldt Fog.

Soooooo goooood.

*Granola
oats
cashews
honey
almond oil
sunflower seeds
sesame seeds
garam masala

dried apricots and mangoes

Besides organic has its own scary. I worked at Whole Foods and there are few things scarier than banana spiders.

the spiders that live in bananas or the spiders called banana spiders? Either way, when they come at you unexpectedly, it's good to run screaming. Trust me, I used to live with them.
