Lamb

At the grocery store today I found 2 lbs of lamb leg on sale. I stood there for a minute wondering which direction I would go with it. Middle Eastern with apricots? Indian? No.. Southwestern. Big surprise, it's my favorite.*

Get out your big red Dutch oven! (eeeeee!)
Saute garlic and onions
Brown the meat
1/2c Mexican beer**
Tomatillos
Winter Squash***
Potato
Corn
Bay leaves
Cilantro (or not)
Mexican oregano
Smoked paprika
Smoked Salt
Some spicy. Peri Peri?
Edit: roast banana peppers, green olives
Many hours in a low oven.

*When you decided to braise it, you went and got some beets too. Roasted beets now means cranberry beet risotto later in the week :)
** We keep Mexican beer in the house for cooking, and those few that drink it.
*** I used a squash I had never seen before from the Korean market. Pumpkin or whatever would be great.
