I was unable to feel warm all day so I decided that today should be my annual Pumpkin Day.
If my own pumpkins don't produce, in early October I pick out 3-4 medium sized heirloom pumpkins. They act as decor from Halloween until Thanksgiving, then sometime after Thanksgiving I cook them. This takes about 3-4 hours of messy work but will save much more time than that in the future. I got
skazat to help. The roasted pink pumpkin yielded 12c of mashed pumpkin. The Cinderella and Luminaria pumpkins yielded 15c of diced raw pumpkin. We saved some seeds for growing from the pink, and
skazat roasted the seeds of the Luminaria in sea salt and harissa.
Of all the people who come over for dinner: vegetarian, vegan, raw, allergic, everyone loves pumpkin (so far) and I always have something to cook.
The pumpkins will become:
-Pumpkin bread
-Pumpkin muffins
-Pumpkin ice cream
-Pumpkin poblano soup
-Thai Pumpkin Curry
-Indian Pumpkin Curry
-Pumpkin lasagne
-Pumpkin au gratin
......you get the idea.
