Dinner:
Roasted green tomatoes and broccoli (I grew those!)
Spaghetti squash with cinnamon cranberry goat cheese
Forbidden rice with smoked olives and lemon juice

John got the bowl lickings of the Pumpkin Fudge Ripple ice cream I made for my bosses' birthday tomorrow.


One of my co-workers poked her head into my office and said, "You have an amazing green tomato recipe. What was it again?"
"Hmm. What kind of recipe?"
"Roasted."
"Oooooohhhhhh. I forgot I had that recipe."

Your larger green tomatoes you'll want to fry and make into friend green tomato bacon sammiches, oh yes you will. But the littler ones are prefect for roasting.

Roasted Green Tomatoes
Quarter or half lots of small green tomatoes and put them in a baking dish. If you have an onion and garlic household, you'll want to add those too.
Olive oil, balsamic vinegar, basil, oregano, S&P.
Roast at 350 for about 45m. Stir from time to time.
Serve over rice or pasta.
