You can make pesto out of anything: Green Tomatoes

You can make pesto out of anything. Or something like pesto. A pasta sauce,
I had many smallish green tomatoes.
Quartered green tomatoes
1/4c raw pumpkin seeds (I'd bet pistachios would be awesome).
1/4 c olive oil.
S&P
400 degrees.
Parsley
Parm: grated
Pancetta: pan fried
Put your green tomatoes, olive oil, and S&P in a roasting pan. Roast for half an hour. (make pasta, whole wheat was so good with this) Add pumpkin seeds and roast until there's some carmelization and everything is mushy. Dump into a blender with the grated parm and parsley. I needed to add some water at this point. Instead of water you could use cream or stock. Really go with that idea.
Combine with pasta and top with bits of pancetta.
