Basil Risotto Cakes with Harissa Sauce


I rarely plate. I'm not practiced at it.
I used arugula for greens, stuffed half the cakes with Humboldt Fog and the other half with smoked gruyere, and forgot the tomato paste all together. It was delicious.


You though, for just making a normal dinner, ought to skip the greens, skip the sauce, skip the stuffing and rolling and frying and just make the risotto and serve it alone.
Just the risotto. It is WONDERFUL alone and takes half the time. Maybe have a small side salad.
Risotto is not difficult, just slow. It takes patience and stirring. Risotto is wonderful to make on a chilly night when you have a nice white wine to drink and it feels good to stand in front the hot stove.
