Stewed Beets w greens and ginger
adapted from 660 Curries.
1lb beets w greens
2T canola oil
1T mustard seeds
2 chilis
1t salt
some fresh ginger.
Chop greens off beets. Chop greens. Peel beets and chop.
Heat oil in pan add mustard seeds and cover the pan till they pop like popcorn. Add beets, ginger, and chilis, braise 10-15m. Add beet greens, salt, simmer till soft (depends on your beets size) ~20-30m.
*it also calls for 6 fresh curry leaves, added w/ ginger, if you can get those.
