Samosa Pie

Brain storm: I like samosas, but not always the friedness. And whenever I make them I never have enough dough. And I hate frying things... I could make samosas...in a pie!

Google says I'm not the first person to have this flash of genius. But it was awesome anyway.

Samosa Pie

1 pie crust. I used premade for lots of reasons. Do as you will.

Potatoes, peeled and chopped (I used russet and red)
1/2 bag frozen peas and carrots.

1/2c chopped mint
1/2c chopped cilantro
2 hot peppers (whatever)
1/2 diced onion
lots of grated ginger
salt
butter

ground cumin
curry powder
pepper

Cook your potatoes, peas and carrots, and mash them together.
Cook aromatics in butter. Add to potatoes. Add spices. Press into pie crust and add top. Bake at 350 for 45m.

The Chutney is a regular chutney recipe but with thinly sliced kumquats and candied hibiscus flowers. I cannot find where I wrote it down.

Salad:
Sliced turkey, sliced muenster, jarred baby mandarin oranges, arugula.

Rice Krispie Treats
Standard recipe except I used coco krispies and 2T crunchy peanut butter.
